Preparing soparnik - culinary workshop

The culinary workshop offers an immersive experience in preparing the traditional dish of Poljica – soparnik (chard and garlic pie). Conducted in an authentic setting, participants engage in the expert preparation of soparnik using traditional methods while delving into the culinary heritage surrounding this iconic dish. The hands-on workshop involves active participation in the preparation process, culminating in a delightful tasting session.

Centuries ago, the region between the Cetina and Žrnovnica rivers was home to the autonomous and democratic Poljica Republic. Inhabitants cherished a good life, utilising the bounties of nature to create dishes like soparnik. Prepared from a few locally sourced ingredients found in gardens and neighbouring areas, soparnik was traditionally baked on an open-hearth furnace present in every household. Initially reserved for festive occasions, the tradition evolved, becoming a cherished heritage of the region. Today, the Poljica soparnik is listed as Croatia’s intangible cultural heritage, proudly bearing the geographical origin indication.

The culinary workshop takes place in an authentic setting where the cook prepares soparnik, guiding guests through its origin and production phases, explaining terms like “lazanjur” and “sinija.” Enthusiastic participants can compete in the art of rolling out the dough, while others get the chance to season the filling. The workshop culminates in a tasting session of the freshly baked soparnik paired with black wine.

The program includes:

  • Preparing soparnik by an expert in an authentic setting
  • Learning about the tradition and history of the Poljica and  soparnik
  • Tasting of soparnik with local wine
  • Accompaniment of a licenced guide

Price: 68 Eur per person

The workshop can be arranged for groups of 4 to 16 persons. | The excursion is suitable for all age groups (children and minors must be accompanied by parents or other responsible adults).| Expert guided tours in Croatian and English are available (also in other languages, at request). | All the above elements of the program are optional; kindly contact us for the final version of the program.
